Ingredients

1 - Sq Pizza

Mix everything but the salt

  • bread flour (416 g)
  • yeast (1 teaspoon)
  • water (340 g), Room Temperature
  • olive oil (2 tablespoon)

Mix together and wait 10 minutes

salt + mix more

  • salt (1 ¼ teaspoon)

Mix salt and wait 20 minutes

Gentle kneeding

  1. wet hands, fold dough over itself by gently lifting and folding edge of dough toward middle. Turn bowl 90 degrees; fold again. Turn bowl and fold dough 4 more times (total of 6 turns). cover to wait 20 minutes
  2. Repeat 2 more times
  3. Spray bottom of 13 by 9-inch baking pan liberally with oil spray. Transfer dough to prepared pan and spray top of dough lightly with oil spray. Gently press dough into 10 by 7-inch oval of even thickness. Cover pan tightly with plastic and refrigerate for at least 16 hours or up to 24 hours.

Cook Pizza

  1. Oven temp 450
  2. Press dough into the corners of flat baking sheet pan and let it rise on the counter for a few hours.
  3. Add oil plus sauce to dough and cook for 15 minutes
  4. Add cheese and other ingredients and cook for remain 10 minutes until cheese is melted
  5. depending on pan size you might have to decrease or increase time. Goal is to have a cripsy light crust.

  • (135 g)
  • (3 g)
  • (3 g)
  • (½ teaspoon), Oregano is more authentic but i like the blend with rosemary better.
  • (¼ teaspoon)
  1. Blend all ingredients together and refrigerate.
