Ingredients

Melt pancetta with Olive Oil

  • pancetta (150 g), slices

In a heavy can - melt the pancetta

Chop Vegetables

  • onion (60 g), 1/2 onion, diced
  • carrot (60 g), 1 carrot, diced
  • celery (60 g), 1 celery stalk, trimmed + diced
  1. Chop up ingredients do not use a food processor
  2. add the vegetables to the oil + pancetta and cook over low heat > stiring until softened not browned

Hamburger

  • ground beef (400 g), 1 lb
  1. Depending on the beef quality you may want to cook the beef in a separate pan and then move to vegetables, to reduce on fat.
  2. Raise the heat to medium and add the meat, break it up, then cook for about ten minutes, always stirring, until it sizzles and browns.

Liquids

  • wine (½ cup), red or white
  • tomato paste (1 tablespoon)
  • tomato sauce (200 g), puree
  • beef stock (1 cup)
  • whole milk (½ cup)
  1. Add the wine; cook over medium heat until it has completely evaporated.
    1. Could substitute just water
  2. Add the tomato paste and tomato sauce. Mix well
  3. add cup of boiling stock or water
  4. Cover + cook for 2 hours. add hot broth or water as needed
  5. Add any milk (traditionally used) half way through the cooking; allow to evaporate completely.
  6. season with salt + pepper to taste
  7. Make sure to cook the pasta in the sauce for a bit before serving
