Ingredients

Melt pancetta with Olive Oil
- pancetta (150 g), slices
In a heavy can - melt the pancetta
Chop Vegetables
- onion (60 g), 1/2 onion, diced
- carrot (60 g), 1 carrot, diced
- celery (60 g), 1 celery stalk, trimmed + diced
- Chop up ingredients do not use a food processor
- add the vegetables to the oil + pancetta and cook over low heat > stiring until softened not browned
Hamburger
- ground beef (400 g), 1 lb
- Depending on the beef quality you may want to cook the beef in a separate pan and then move to vegetables, to reduce on fat.
- Raise the heat to medium and add the meat, break it up, then cook for about ten minutes, always stirring, until it sizzles and browns.
Liquids
- wine (½ cup), red or white
- tomato paste (1 tablespoon)
- tomato sauce (200 g), puree
- beef stock (1 cup)
- whole milk (½ cup)
- Add the wine; cook over medium heat until it has completely evaporated.
- Could substitute just water
- Add the tomato paste and tomato sauce. Mix well
- add cup of boiling stock or water
- Cover + cook for 2 hours. add hot broth or water as needed
- Add any milk (traditionally used) half way through the cooking; allow to evaporate completely.
- season with salt + pepper to taste
- Make sure to cook the pasta in the sauce for a bit before serving
